Ultimate Ice Cream Birthday Cake

Healthy, this cake is not. It’s a birthday cake, it’s not supposed to be healthy, and if I am going to call it the “ultimate” well you can bet it’s going to be sinfully good.

icecreamcake2Now do you need to wait for a birthday to enjoy this recipe, of course not. It’s still hot outside, and this is one cool treat, that’s sure to please a crowd.

Why “ultimate” you ask, well because it includes several birthday themed treats. It starts with a box of Party Rainbow Chip Cake Mix, the “Official Cake Of Birthdays”.

Then Birthday Cake Oreo Cookies, and Birthday Frosting Filled Chips Ahoy, are crumbled up, and stirred into the batter!

Look at those yummy cookie chunks, mixed right into the batter!

The cake is then topped with “Birthday Cake Ice Cream Sandwiches” found at Safeway. Then frosted  with a combination of whipped topping, and store bought vanilla frosting, with sprinkles.  On your birthday, it’s go big, or go home, so of course we finished it off with some more cookies!

A super easy cake to make, and even easier to eat.

The Ultimate Ice Cream Birthday Cake

Makes One Large Pan (approximately 11 inches x 15 inches)

Ingredients:

  • 1 Box of Betty Crocker Party Rainbow Chip Cake Mix
  • 1 cup of water
  • 1/2 cup of vegetable or canola oil
  • 3 eggs
  • 6 Crumbled Chips Ahoy Birthday Frosting Filled Cookies (plus more for topping cake)
  • 6 Crumbled Birthday Cake Oreo Cookies (plus more for topping cake)
  • 2 Boxes of Birthday Cake Ice Cream Sandwiches (You won’t use all of the sandwiches)
  • 1 Small Tub of Whipped Topping (8 oz)
  • Store Bought Vanilla Frosting With Sprinkles (15.6 oz)

Directions:

Preheat oven according to package directions on cake box.

Prepare batter according to directions on box, combining your water, eggs, and oil with mix.

Crumble up a total of 12 cookies. Mix in with your batter.

Pour your batter into your prepared pan, and bake according to package directions.

Once cake is done, let cool completely, before topping with ice cream sandwiches.

To make frosting, stir to combine your whipped topping, and frosting. Spread evenly over cake, and decorate with sprinkles, and more cookies, if you desire.

Store cake covered in the freezer, until ready to serve.
