Thanksgiving Waffles

I first learned of Thanksgiving Waffles while watching an episode of Diners, Drive-ins, And Dives. I prepare a traditional Thanksgiving feast every year for my family from scratch. It is a lot of work, but always worth it in the end. Problem is, it’s only May, and I am already craving those savory holiday flavors once more.

If you love a traditional Thanksgiving feast as much as I do, and don’t want to wait, please give my recipe for Easy Thanksgiving Mini Dressing Waffles a try. They are super easy, and quick to prepare any day of the year.

Easy Thanksgiving Mini Dressing Waffles
Serves 4 (makes 8 mini waffles)

Ingredients:

  • 1 (6 oz) box of stuffing mix
  • 1/2 stick of butter (to prepare stuffing)
  • 2 eggs
  • non stick butter flavored spray
  • 1 (4 oz) package of instant mashed potatoes or homemade mashed potatoes
  • 1 can (14 oz) cranberry sauce ( I prefer whole berry)
  • 1 (12 oz) jar of roasted turkey gravy
  • 1 package of oven roasted turkey breast (good quality deli meat)

Directions:

Step 1. Make Mini Waffles:

Prepare stuffing mix according to package directions. Let stuffing cool to room temperature.  Then stir in 2 eggs, mix eggs with stuffing until well combined. Preheat waffle maker to high.  Shape stuffing into 8 small even sized balls.  Spray your waffle maker with non stick butter flavored cooking spray, top and bottom, before placing stuffing inside to brown.

If you have a large round Belgian style waffle maker, you will be able to make 4 mini waffles at one time. Place one ball of stuffing in each quadrant of your waffle maker. Cook for 5 minutes or until crispy and brown. Repeat to make 4 more mini waffles.

Step 2. Make Mashed Potatoes, Heat Gravy, And Turkey:

You may use leftover mashed potatoes, or make some from scratch.  To save time, you may also choose to prepare instant mashed potatoes, according to package directions. I prefer Baby Reds flavored instant mashed potatoes.

Heat gravy according to package directions. Heat turkey deli meat on a microwave safe plate for a few seconds, until warm.

Step 3. Assemble:

For an adult dinner serving, take two small mini waffles, top with a little cranberry sauce, hot mashed potatoes, deli meat, and gravy.
