BBQ Chicken Linguine

You walk in the door, ready to relax after a hectic day, but before you can even put your stuff down you hear, “Mom… I’m starving!”  If this sounds familiar, then stick around, and check out my recipe for BBQ Chicken Linguine.  It’s a super easy dinner that will be sure to please your hungry crowd.

This one is kid approved, that’s right, it received 3 thumbs up from my picky bunch. Quick and simple to make too.

You may choose to pour yourself a glass of wine to drink while you cook, but you may not have time to finish it before dinner will be on the table. This dish will come together in about 15 minutes, meaning you might just have time to relax after all.

I often make spaghetti because it’s easy, affordable, nutritious and always well received. However sometimes you really can have too much of a good thing. This recipe is a fun way to jazz up an Italian family favorite.

I used linguine today, because it was in my pantry, however spaghetti, or any pasta, would work just as well. You may cook your own chicken ahead of time and shred, or save time and pick up a rotisserie chicken from your favorite deli.

BBQ Chicken Linguine

Serves 8

Ingredients:

  • 1 (16 oz) package of linguine or spaghetti pasta
  • 1 large green bell pepper, seeded, and roughly chopped
  • 1 Tbs of canola oil
  • 1 (14.5 oz ) can of diced tomatoes
  • 2 Tbs brown sugar
  • 2 Tsp apple cider vinegar
  • 2 Tsp Worcestershire sauce
  • 1 1/3 cups of store bought smokey BBQ sauce
  • 24 oz shredded fully cooked chicken
  • Optional: Top with  fresh chopped chives or green onions

Directions:

Prepare pasta according to package directions. Saute bell pepper in a large skillet with oil, over medium high heat, for approximately 5 minutes. Add tomatoes, sugar, vinegar, Worcestershire sauce, BBQ sauce, and cooked shredded chicken to skillet. Stir to combine, and simmer on low for 5 minutes.

Combine sauce with your cooked and drained pasta, toss to coat pasta. Optional, before serving top with fresh cut chives or chopped green onions.
