5 Minute Pot Roast

As a substitute teacher, when my boys go back to school, I go back to work. Between teaching, blogging, soccer, my Etsy shop, local craft shows, and what seems like an endless list of housework, life can be overwhelming this time of year. I know I am not the only parent who feels like their “to do list” will never end. It’s this time of year, that my crock pot, becomes a permanent fixture, on my kitchen counter top.

Cooler nights, make a hearty, home cooked, warm meal, even more enjoyable. It’s comforting to know, that after a long day, dinner will be hot and ready when you get home. The aroma that will greet you at the door, is unbeatable too.

With just 5 minutes of your morning time, this crock pot roast will be ready to slow cook all day. A complete meal in one pot, what could be easier?

I recently discovered a tasty slow cooker sauce at Safeway. They have lots of varieties to choose from, but the one I used for this recipe, is for a pot roast. It’s a robust sauce with red wine, Porcini mushrooms, onions, and spices already in it. A great base for a quick meal. Using frozen stew vegetables, with potatoes, carrots, onions, and celery, saves lots of time too.

5 Minute Pot Roast

Ingredients:

  • 1 (16 oz.) Jar of Safeway Select Slow Cooker Sauce Pot Roast Flavor
  • 2 TBS of Water
  • 1 Boneless, Beef Chuck Pot Roast (approximately 2.5 lbs)
  • 2 Bags of Frozen Safeway Select Stew Vegetables (24 oz. each)
  • 1/4 tsp Black Ground Pepper
  • 1/2 tsp Celery Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder

Directions:

Pour your slow cooker sauce into your crock pot. Add water to your empty jar, seal with lid, shake, and then pour into pot. Add roast to your crock pot. Note: roast should be defrosted, not frozen.

Top roast with frozen vegetables. Sprinkle your seasonings on top of veggies, add more or less, to your liking. Cover with lid. Cook on high for approximately 4 hours, or low for approximately 8, or until beef reaches an internal temperature of 165 F degrees.

Slice and serve meat, with a hearty helping of vegetables, and drizzle with sauce from pot.
