LL&TT Farm to Table Fundraising Dinner Promises Spectacular Meal in a Meadow

The dining experience of the year awaits the lucky few who join Hulsman Ranch near Susanville for a meal in the meadow August 20th. The Lassen Land and Trails’ first Farm to Table dinner will feature a menu worthy of the finest white tablecloth restaurants that would require a long journey to reach but can be found one evening in Lassen County.

Local is the theme, so the menu begins with an appetizer buffet of Endive boats with smoked salmon, dill creme and pickled Rustic Rancher Radish, grilled local heirloom red polenta with local sun gold tomatoes Ricotta Salata with orgegano tips, and heirloom tomato, basil, avocado Napoleons on homemade crackers with a Balsamic Reduction.

Sitting down to one long table facing the Diamonds, the feasting begins with the choice of Hulsman Ranch Grilled Chateau Briand or Hulsman Ranch frenched 4 bone rack of lamb with meyer lemon gremolata, or for the vegetarians among us, Summer Truffled Corn Cakes with Creme Fraiche. These will be accompanied by Local Hall St Gardens Grilled Summer Squash with mint oil, toasted pistachios and roasted Gypsy peppers with Local potato salad from Hall St. Gardens Potatoes, Kale, and Roasted Beets, and sheep feta served family style at your table.

No one will be able to resist Strawaberry Pavlova with Local Sigala Farms Strawberries with Rose Water Ranch egg white for the delectable meringue. This, as you watch the sunset in the west while a nearly full moon will be rising in the east.

Wine pairings will accompany each course, to add to the depth of flavor and chemistry this evening will provide diners. Cooper Garrod wines will be featured that are crafted by the same family that owns the Bird Flat Ranch on Hwy 395. Local musicians will be adding a note of harmony and color to the landscape, for a further sensory pulse in the background.

Chef Coby Leibman, trained at the Culinary Academy in San Francisco, will bring this menu to our palates. His connection to flavor, seasonal produce and meats will put Lassen County’s agricultural bounty on a plate in such an amazing way that it will be an unforgettable dining experience.

While enjoying this captivating meal – you are also doing good things as all proceeds go to Lassen Land and Trails for their many community projects and programs.
